Santorini
Santorini is the Aegean volcanic wine island best known for dry Assyrtiko and the sweet dried-grape wine Vinsanto.
Assyrtiko leads the dry whites, often with considerable acidity and structure despite the island’s sunny setting. Growers train vines low to protect fruit from strong winds, including the familiar basket-shaped kouloura. Sandy volcanic soils and very old vines are central to the island’s distinctive vineyard landscape.
Dry Santorini and Vinsanto answer different drinking needs. Vinsanto uses dried grapes and is sweet; the dry whites can be taut when young and develop with time. Nykteri is another term to recognise, associated with a particular dry-wine style. Always read the individual wine rather than assuming the island name fixes sweetness.
