Jerez
Protected Designation of OriginSpain
Jerez is the Andalusian wine region of Sherry, with dry flor-aged wines, oxidative styles and sweet wines made by different methods.
Palomino is the main reference grape for dry Sherry, while Pedro Ximénez and Moscatel are associated with sweet wines. The white albariza soils store winter moisture for the dry growing season. Vineyard place and cellar ageing both matter, which is why the finished wines can differ so greatly despite shared origins.
Do not use Sherry as a synonym for sweetness. Fino and Manzanilla are dry, while other bottles are oxidative or sweet. Jerez-Xérès-Sherry and Manzanilla-Sanlúcar de Barrameda are protected names with their own conditions; a wine made in a similar style elsewhere does not acquire that origin.
